The first fry cooks the potato. The second fry, hotter and shorter, makes the crust. Garlic butter goes on after, or the garlic burns in the oil.

    Soak the potatoes in cold water 20 minutes. Drain and dry thoroughly.

    Fry at 325°F until tender and pale, about 5 minutes. Drain and rest at least 10 minutes.

    Heat the oil to 375°F and fry again until deep gold, 3 to 4 minutes.

    Melt the butter, cook the garlic for 30 seconds until fragrant but not brown, and toss it with the hot fries, parsley, and salt. Add Parmesan if you want it.

Notes & swaps

  • Wet potatoes will not crisp. Dry them in a towel before the first fry.
  • Oven fries at 450°F work if you toss them with oil and give them 30 to 35 minutes. The garlic butter step stays the same.
