Brush 4 ramekins with butter in upward strokes, dust with cocoa. Heat oven to 400°F with a sheet inside.

Melt chocolate with butter; stir in yolks.

Whip whites with cream of tartar to soft peaks, add sugar and whip to glossy firm peaks.

Fold a third of the whites into chocolate, then the rest gently.

Fill ramekins, level, run a thumb around the rim and bake on the hot sheet 12–14 minutes. Serve immediately with ice cream.
