Use underripe pears — ripe ones collapse into mush in the caramel.

    Melt sugar in a 10-inch ovenproof skillet to amber caramel; stir in butter and spice.

    Arrange pears cut-side up tightly in the caramel and cook 10 minutes over medium.

  3. 03

    Drape pastry over, tuck edges and cut steam vents.

  4. 04

    Bake at 400°F 25–30 minutes until golden.

  5. 05

    Rest 5 minutes, place a plate on top and flip carefully. Serve with crème fraîche.
