Method

  1. 01

    Bring water, milk, butter, sugar and salt to a boil. Add flour and beat over heat 2 minutes until a ball forms.

    Cool 5 minutes, then beat in eggs one at a time to a glossy dough that falls in a V.

  3. 03

    Pipe walnut-size mounds and bake at 400°F 25–30 minutes until deep golden; pierce each and cool.

  4. 04

    Heat cream and syrup, pour over chocolate and stir smooth.

  5. 05

    Split puffs, fill with ice cream and pour over hot sauce.
