Slow-Braised Beef Ragù with Pappardelle

Finish pasta in the sauce with a little starchy pasta water so the ragù clings to every ribbon.

Heat oven to 325°F. Season and brown beef in a Dutch oven; remove.

Cook vegetables 10 minutes, add garlic and tomato paste 2 minutes, then wine and reduce by half.

Add tomatoes, broth, herbs and beef. Cover and braise 2 1/2–3 hours.

Shred beef in the sauce and reduce on the stove if thin.

Toss with cooked pappardelle and a splash of pasta water; serve with Parmesan.
