A water bath keeps the custard creamy; without it the eggs scramble at the edges.

Butter brioche, cut in triangles and layer in a buttered dish with drained raisins.

Whisk eggs, yolks, sugar, milk, cream, vanilla and nutmeg; pour over and press down. Soak 20 minutes.

Sprinkle with demerara and bake in a water bath at 325°F for 35–40 minutes until just set.

Brush with warm marmalade and serve warm.
